I promised Zee today we would do something “messy”. We were going to plant our seed but I forgot them in the car and hubs took them to work. So I set about finding something for us to cook. I don’t profess to be a good cook by any means so I went hunting for a cereal bar recipe since I was out of them, and was looking for a cheaper version of the store bought ones. I found this recipe for Fruit and Grain Bars by Anne Coleman. My cupboards are pretty bare when it comes to baking supplies and I didn’t have a car to go get anything so I ended up using things I had on hand…
Here was my version of the recipe, which by the way, tastes fantastic and I don’t even like blueberries! When you go to make them you may want to use the original recipe!
Hands-On Time: About a half hour with help from little hands! (It should have been 5 minutes)
1 box butter pecan cake mix
2 cups prepackaged oatmeal, approx 6 bags
A few really good shakes of ground cinnamon (1/2 tsp was the recommended amount)
1/4 cup packed brown sugar
1/2 cup melted butter
1 large egg (and a few accidental egg shells)
1 cup blueberry jam
Mix together cake mix, oats, cinnamon and brown sugar.
(Spill a good portion on the floor. Stop for a few minutes and giggle and carry on).
Add egg and melted butter and stir with a wooden spoon until combined.
(Take some dough and make snowmen and then squish them between your fingers).
Divide batter in half and spread half into bottom of a greased 9×13 inch baking pan.
(Take a few more minutes to play the drums on the bottom crust).
Spread fruit spread on top of crust to the edges.
(Don’t forget to lick the spoon when you’re done!)
Crumble the remaining cake mixture over the jelly and press lightly into jelly with hands.
(We got a little of the jam all mixed up with the crust, but it still tastes wonderful).
Bake at 350 degrees F for 30 minutes or until top is golden.
Cool well and cut into 20 bars.
